When frying potatoes, preheat skillet on MEDIUM. When water dances, skillet is HOT enough to fry golden crispy. Rinse starch off potatoes using inset. After preheated, spray skillet with Pam and fry with NO LID until crispy. Then flip. Leave lid off until crispy. Then cover for 5 -7 minutes to tenderize. ENJOY!
NOTE: If your stove/burner is on the HOT side, you may need to start your cooking at a lower setting such as medium-low. In other words, lower the temperature if you are consistently burning things.
If, after being on medium heat for at least 8 minutes, the vapo-valve stands up but has not clicked steadily, DO NOT wait for it to do so. The unit is hot enough and should be turned down to the lowest possible heat setting.
