Meaty Lasagna
Ingridients:
1 jar spaghetti sauce
1 package pasta
2 14oz can diced tomatoes
2 c ground beef
1 container ricotta/cottage cheese
1 block mozzarella/Monterey jack cheese
1 med zucchini
1 small eggplant
5-10 mushrooms
Spinach, chopped
6-12 garlic cloves, minced
1 red bell pepper
Directions:
Combine spaghetti sauce, canned tomatoes, and garlic. Pour half of sauce mixture in bottom of your 5 qt Wok Electric Skillet. Layer ¼" thick sliced eggplant and fresh spinach over sauce. Layer noodles and meat over vegetables . Pour remaining sauce over noodles and meat. Slice zucchini and mushrooms on #4 cone over sauce. Shred cheese on #2 cone and spread over top. Place sliced bell pepper on top for decoration. Heat on med (225 ) until vapo valve clicks then reduce heat to low for 25-30 min.
Homemade Tomato Sauce
Ingridients:
1 med. onion chopped
3 cloves garlic, minced
1 16 oz can dice tomatoes
1 tsp oregano
½ tsp basil
½ cup vegetable broth
2 T tomato paste
Salt and pepper
Directions:
Sautee onion in 11" skillet until it becomes translucent (you may use olive oil if you like) Add garlic and saute for one more minute. Add remaining ingredients and cook for 10min.
Eggplant or Chicken Parmesan
Ingridients:
1 large eggplant, sliced ¼" thick
Olive Oil spray
Fresh basil leaves, chopped
Cheese sauce (see recipe)
Tomato sauce (see recipe)
2-3 T parmesan
Directions:
*When doing Chicken Parmesan replace eggplant slices with 5 boneless skinless chicken breasts.
Salt the eggplant and spread out on paper towels, let them set while you prepare the sauces. After sauces are ready rinse eggplant slices and pat them dry. Pre-heat Electric Skillet to 325 (for chicken 450 ) . Lightly coat with olive oil and place slices in Electric Skillet. Brown slices on both sides, about 5-8 min. (cook chicken thoroughly, about 3-6 min,. on each side). Sprinkle half of the bread crumbs over half of the eggplant slices in bottom of Electric Skillet. Spoon half of the tomato sauce and pour half of the cheese sauce over eggplant and bread crumbs and sprinkle with parmesan, repeat layering reserving some of the breadcrumbs for top. Sprinkle top with remaining breadcrumbs and parmesan. Cook for about 20 minutes on 350 (turn down skillet when it clicks). Spring with fresh basil just before serving if desired.
Sun Dried Tomato Chicken Alfredo
Ingridients:
2 cups Fettuccini, cooked
2 cloves garlic, minced
2-3 boneless skinless chicken breasts
Chicken seasonings
½ c. red, green, and yellow pepper
¼ c. sliced mushrooms
¼ c. diced red onion
Basil to taste
1/3 c. sun dried sliced tomato
1 jar Alfredo Sauce
Directions:
Season Chicken with seasoning, Pre-heat Electric Skillet to 350 . Add chicken and lightly brown on both sides leaving lid slightly ajar. Add onions, mushrooms, garlic, peppers, fettuccini, and sun dried tomatoes. Mix sauce with basil and pour over chicken, vegetables and pasta. Place lid on skillet, when vapo valve clicks reduce heat to 175 and cook for 20 min.
Fettuccini Alfredo With Shrimp and Vegetables
Ingridients:
1 1b fettuccini noodles
1 c. fresh shrimp
¼ cup milk
3 oz grated Parmesan
1 jar Alfredo sauce
1 c. fresh spinach
½ c. mozzarella cheese
1 tsp garlic powder
4 T olive oil
Salt & pepper to taste
1 yellow squash
1 zucchini
Directions:
Cut zucchini and squash on #4 cone. Layer zucchini, squash, ½ Alfredo sauce, fettuccini noodles, other ½ sauce, shrimp, mozzarella cheese, spinach, milk, and parmesan cheese. Start at 320 , reduce heat to 175 when vapo valve clicks and cook for 20 min.
Pizza
Ingridients:
1 tsp olive oil
1 jar pizza sauce
Toppings of choice
1 ½ c. mozzarella cheese
1 pckg pizza dough, prepared as directed
Directions:
Coat bottom and 1" up the sides of cold Electric Skillet with olive oil. On a floured surface roll out pizza dough to 11½ inch circle ; center in skillet, patting dough about ¼- inch up the sides. Spread sauce evenly over dough; arrange half of toppings over sauce. Shred cheese on #2 cone and sprinkle evenly over toppings. Arrange remaining toppings on top. Cover, cook at 275 and set timer for 15 minutes. Using 2 spatulas remove pizza to cutting bour and cutt into serving size pieces.
Spinach Pizza
Directions:
Follow instructions for Pizza recipe, substitute Alfredo sauce for pizza sauce and use fresh or frozen spinach as topping. Top with parmesan cheese.
Eggs (scrambled or fried)
Cooking Spray Method
Directions:
Spray cold skillet with cooking spray. Put eggs in cold, then turn heat to med. or med. high. When egg separates from pan (not before) turn eggs. Wipe out skillet and spray again before adding new eggs.
Butter Method
Directions:
Heat skillet to med. Rub a stick of butter around just enough to coat skillet. Add eggs and flip when separated from pan.
